Bourgogne is the paradigm of single-vineyard wine: just two varieties — Pinot Noir for the reds and Chardonnay for the whites — express the minute variation of limestone and clay soils along the Côte d'Or. The hierarchy runs from bottom to top: Régionale, Village, Premier Cru and Grand Cru — just 33 plots, less than 2% of the total vineyard area.

The Côte de Nuits, to the north, produces the great reds of Gevrey-Chambertin, Vosne-Romanée and Chambolle-Musigny; the Côte de Beaune yields the world's most celebrated whites (Meursault, Puligny-Montrachet, Corton-Charlemagne) alongside reds of more immediate elegance. The Côte Chalonnaise and the Mâconnais offer more accessible styles with the same varietal philosophy and better value.

The historical fragmentation — a legacy of Napoleonic successions — means that a single Grand Cru such as Clos Vougeot has more than 80 different owners, making the producer's name (domaine) an equally important variable as the appellation itself.
