France's first designated AOC (1936) bears the name of Louis Pasteur's home town in the northern Jura. The appellation covers Savagnin, Chardonnay, Poulsard, Trousseau and Pinot Noir across heterogeneous soils of Triassic marls, limestone and schist. Vin jaune — Savagnin aged under flor for a minimum of six years and three months in 62cl clavelins — is the appellation's most celebrated achievement and one of France's most distinctive wine styles.

Poulsard defines the local red: pale ruby in colour, barely distinguishable from a dark rosé, with aromas of cherry, red plum and wild herbs and minimal tannin structure. The combination of oxidative whites and fragile, high-acid reds makes Arbois one of France's most distinctive terroir expressions. Domaine de la Tournelle and Rolet are among the appellation's key reference producers.
