Above 300 metres altitude, on the plateau and valleys behind the Côte de Nuits, the vineyards of Hautes Côtes de Nuits ripen later than those of the Côte, with cooler nights that concentrate acidity and preserve primary aromas. The Pinot Noir reds have a more rustic character, with a more austere fruit profile and firmer tannins than their valley neighbours; the Chardonnay and Aligoté whites show a refreshing vivacity greatly appreciated at table.
The appellation covers several villages—Marey-lès-Fussey, Messanges, Villers-la-Faye—and producers working at altitude are achieving wines of growing interest as climate change raises temperatures in the lower zones of the Côte.
