The Sud-Ouest of France groups several dozen denominations in the historical shadow of Bordeaux, with indigenous varieties of great character found nowhere else. Cahors produces the most concentrated and tannic Malbecs in the world on the limestone plateau (causses) soils of the Lot. Madiran makes robust Tannat-based reds, now often softened through micro-oxygenation, of an almost unique tannic depth. Jurançon, both dry and sweet (moelleux), exploits Petit Manseng and Gros Manseng on the Pyrenean foothills.

The diversity of the region extends to smaller but equally interesting denominations: Marcillac with Fer Servadou (Mansois) and its refreshing acidity on red schist soils, Irouléguy in the French Basque Country, Gaillac with its Mauzac and Braucol, or Fronton with Négrette. Atlantic influence brings freshness to the north and west; the Pyrenean massif generates continental conditions with dry summers and prolonged autumns that favour concentration.
