The archipelago, situated in the Atlantic off the African coast, produces wines under unique conditions: dry-farmed vineyards on volcanic picón (lapilli) soils, free of phylloxera due to the absence of clay soils and the ocean barrier, with vines sometimes a century old trained as bushvines or under Canarian pergolas (parras). The climate varies considerably between the islands: Lanzarote is arid; Tenerife and La Palma combine humid, Atlantic north-facing slopes with dry, sunny south-facing aspects.

The ten denominaciones de origen of the archipelago have small productions and a distinctly artisan character. Listán Negro is the most widely planted red variety; Listán Blanco dominates in whites and produces wines of high acidity and characteristic saline notes. Negramoll, Baboso Negro, Tintilla and Vijariego are highly distinctive indigenous varieties that have gained growing international recognition since the mid-2000s.
