The broadest AOC within the Jura plateau covers the widest range of varieties and styles found in this mountain wine region. Chardonnay appears in two contrasting philosophies: the ouillé style (topped-up barrels, protective winemaking, fresh and fruit-driven) and the traditional sous-voile (oxidative, aged under a flor yeast veil), which produces the savoury, walnut-inflected wines the region is famous for. Savagnin sous-voile is the route to vin jaune, aged a minimum of six years and three months in 62cl clavelins.

The indigenous red varieties — Poulsard (pale, delicate, red-fruited), Trousseau (deeper, spicier, more structured) and Pinot Noir — offer a stylistic range unique in France. The appellation also encompasses vin de paille (straw wine) and Macvin (local mistelle), making Côtes du Jura the fullest introduction to the plateau's extraordinary diversity.
