Domaine Jean-Luc Mouillard

Jean-Luc Mouillard did not exactly grow up in a wine house. His family had a dairy farm with a few parcels of vines on the side, and that fruit went to the village cooperative.

He studied oenology and set up his own estate in 1991. Over the years he has built it to eleven hectares across three Jura appellations: Côtes du Jura, L'Étoile and Château-Chalon.

In 1997 he moved to Mantry, where he bought a sixteenth-century house whose stone cellar suited the ageing of wine. The fermentation and bottling facilities came later.

The bulk of production, around 80%, is white from chardonnay and savagnin; the rest is pinot noir, poulsard and trousseau. The vineyard sits at about three hundred metres.

He has farmed organically since 2020 and gained certification in 2023.
