The triangle formed by Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa María is one of the world's most complex denominations in terms of styles and production technique. The albariza soil — white limestone, compact, with high solar reflectivity and notable water retention — distinguishes the highest-quality vineyards. The warm Atlantic climate, with the humid Poniente and the dry Levante as dominant winds, regulates the development of the flor.
Palomino Fino produces all of the denomination's dry wines. The criadera and solera system fractions ageing across multiple vintages, generating the stylistic consistency of Fino, Amontillado, Oloroso and Palo Cortado. The flor — a veil of yeasts that protects the wine from oxygen — is the boundary between biological ageing (Fino, Manzanilla) and oxidative ageing (Oloroso). The VOS and VORS categories (Very Old Sherry, minimum 20 and 30 years in solera respectively) represent the pinnacle of oxidative ageing in the denomination.
