Palomino Fino from albariza soils of the Carrascal estate, Jerez Superior. The Aurora brand traces its roots to Sanlúcar de Barrameda in 1907. Today it is carried forward by Bodegas Yuste, a family almacenista house founded in 1991.

Aged under flor then oxidatively in the Conde de Aldama solera at the Barrio Alto bodega, reaching ~20 years average age. Bone dry, 19% ABV.

The solera this wine comes from was carbon-dated. These are the butts of the Conde de Aldama solera: pre-phylloxera sherry that sat sealed in plaster between the 1880s and the 1920s and was rediscovered afterwards. The dating places the founding of that solera at around 1750.

Aurora, what is more, was a person. The manzanilla carried the name of Aurora Ambrosse Lacave and was a Pedro Romero label; Bodegas Yuste acquired the rights to it in 2015.

Francisco «Paco» Yuste was a drinks distributor in Andalusia. In 1991 he bought and restored Bodega Santa Ana, in Sanlúcar's Barrio Bajo — the old house of the Rainera Pérez Marín family — with its manzanilla solera more than a hundred years old. In 1998 he added the 46-hectare La Alamedilla vineyard; in 2001, the Los Ángeles bodega in the Barrio Alto; and in 2010, the Miraflores bodega, which a group of growers had founded in 1956 in the pago of that name.

Amontillado Aurora is Palomino Fino on pure albariza from the Carrascal pago, in Jerez Superior. It ages some twenty years: first under a natural veil of flor and then oxidatively, with no refortification. It comes from the Conde de Aldama solera, in that Los Ángeles bodega in the Barrio Alto.
