The denomination encompasses two distinct profiles under the same legal framework: the naturally sweet and liqueur wines of the DO Málaga, and the still dry wines of the DO Sierras de Málaga, produced in the comarcas of Ronda, Axarquía, Norte, and Málaga. Terroirs range from the slate soils of Ronda (800–1,000 m) to the clays and limestones of the coast.

Pedro Ximénez and Moscatel de Alejandría are the base varieties for the classic Málaga sweet wines, produced by raisining and solera ageing. The Sierras de Málaga produces altitude reds with indigenous varieties such as Romé and Mantuó alongside international varieties in Ronda, with an unexpectedly fresh profile given the latitude. The Axarquía produces dry and sweet Moscatel from steep hillside slate soils.
