Located north of Narbonne on south-facing slopes between the Montagne Noire and the Aude river, Minervois produces predominantly red wines from Grenache, Syrah and Mourvèdre on limestone and clay marl that provides better water retention than the schist zones to the east. Altitude (up to 400m in the higher zones), the cooling Cers and Tramontane winds, and the clay's moisture-holding capacity give Minervois reds a freshness and structure that distinguishes them from the heaviest southern Languedoc appellations.

La Livinière is the recognised superior sub-appellation — a zone of clay-limestone on the Massif Central's lower slopes where longer hang times and mineral soils produce the most concentrated and age-worthy expressions. White Minervois from Grenache Blanc, Bourboulenc and Roussanne is produced in small quantities and represents good value in a region predominantly associated with red wine.
