The appellation occupies the eastern part of Castilla-La Mancha, on the border with the Valencian Community, on a relief of plateaus between 700 and 1,000 metres crossed by the Júcar and Cabriel rivers. The altitude moderates temperatures compared to central La Mancha and allows slower ripening with greater retention of natural acidity.

Bobal is the benchmark indigenous variety, drought-resistant and of low yield in dry-farmed viticulture, producing wines of very deep colour, high anthocyanin content, and a profile of black fruit with firm tannins. Bobal wines from Manchuela have repositioned the variety—historically used for blending and enrichment—as a high-expression varietal of the Levantine interior. Tempranillo, Garnacha, and international varieties complete the appellation's vineyard.
