Grown at the Atlantic end of the Loire near Nantes, this appellation produces dry whites from Melon de Bourgogne — brought from Burgundy in the seventeenth century and now virtually unique to the region. The quality heartland is Muscadet Sèvre et Maine, produced on gneiss and granite that imparts citrus freshness and mineral precision to the wine.

The defining technique is élevage sur lies: ageing on spent yeast lees without racking, which builds texture, faint yeasty complexity and a characteristic prickle of retained CO₂. The result is one of the world's most food-friendly whites — briny, lean and vivid — with a particular affinity for oysters and shellfish. Ambitious single-commune bottlings (Clisson, Gorges, Le Pallet) can age a decade or more.
