The Anjou sector rests on the schist and metamorphic rocks of the Massif Armoricain, a geological foundation that distinguishes it from the tuffeau-dominated soils of neighbouring Touraine. Chenin Blanc produces dry whites under Anjou Blanc and a full spectrum of sweet wines under Coteaux du Layon and its sub-appellations — the schist providing drainage, warmth retention and a mineral salinity that marks the wines distinctly.

For rosé, the region offers two contrasting styles: Rosé d'Anjou (Grolleau-based, off-dry, delicate in colour) and Cabernet d'Anjou (Cabernet Franc and Sauvignon, slightly sweeter and more structured). The sector also underpins Saumur Champigny and Anjou Villages in red, with Cabernet Franc on tuffeau producing the most age-worthy expressions.
