A mistelle — unfermented or partially fermented grape must preserved by the addition of local pomace spirit — Macvin du Jura is made by muting grape juice with marc de Jura, a distillate produced from the residue of Jura wine production. The resulting fortified wine reaches 16–22% ABV and is classified as a vin de liqueur, aged for a minimum of one year in oak before release.
Permitted varieties include Savagnin, Chardonnay and the red Jura varieties (Poulsard, Trousseau, Pinot Noir), with both white and red styles produced. The flavour profile is rich, sweet and nutty — dried fruit, walnut, candied citrus — with a warming alcoholic presence and a persistent finish. Traditionally served as an aperitif or alongside foie gras and aged Comté.
