The smallest and southernmost of the Jura AOCs takes its name from the five-pointed crinoid fossils embedded in its distinctive blue marl subsoil — a geological curiosity that also shapes the wine's mineral character. Planted exclusively to white varieties — Chardonnay and Savagnin — the appellation's most prestigious style is vin jaune, aged under flor for six years and three months in 62cl clavelins, with its own appellation recognition.

The blue marl imparts a distinctive mineral salinity and chalky texture that separates these whites from those of other Jura zones. Vin de paille (straw wine from dried grapes) and Crémant by méthode traditionnelle are also produced within the appellation. Tiny production scale and exacting terroir make these wines among the most collectable of the Jura plateau.
