One of the Languedoc's largest and most geographically diverse AOCs encompasses a mosaic of schist, limestone and clay soils across eleven recognised internal zones, producing wines that range from robust and rustic to refined and mineral depending on terroir and producer ambition. The dominant varieties are Grenache, Syrah, Mourvèdre and Carignan — the last of which, once the region's overwhelmingly dominant grape, now appears in smaller proportions alongside more recently planted varieties.

Boutenac, in the northern schist hills, is recognised as a superior sub-appellation for old-vine Carignan and Grenache of greater concentration and complexity. The best Corbières reds offer garrigue-inflected character — thyme, laurel, wild herbs — over a core of dark fruit and earthy tannin that improves with three to eight years in bottle.
