Cave de Castelmaure, a cooperative founded in 1921 in Embres-et-Castelmaure, Hautes-Corbières, unites around 60 growers farming roughly 450 hectares. Certified organic (AB), vineyards span clay-limestone soils in the southeast and dark schist slopes in the northwest, at 180–400 metres altitude. This blend of 50% Syrah, 30% Carignan and 20% Grenache is hand-harvested.
"San Sa" playfully references "Sans Sulfites Ajoutés": zero SO₂ is added at any stage. Syrah and Grenache are destemmed for traditional fermentation; Carignan undergoes whole-bunch carbonic maceration. Aged in concrete vats with no oak, the result is a bright ruby wine with fresh cherry, guigne and floral notes, soft tannins, 14.5% abv—best enjoyed young and slightly chilled.
