The northwest of the Iberian Peninsula combines Atlantic influence—abundant rainfall, high humidity, temperate summers—with a relief of deep river valleys and a dominant substrate of granites, slates, and schists. This combination of climatic and edaphic conditions defines an acidity profile and aromatic expression that distinguishes Galician wines from the rest of Spanish production.

The five Galician denominaciones de origen—Rías Baixas, Ribeira Sacra, Ribeiro, Valdeorras, and Monterrei—share a predominance of indigenous white varieties: Albariño in Rías Baixas, Godello in Valdeorras and Monterrei, Treixadura and Torrontés in Ribeiro. In reds, Mencía is the benchmark Atlantic variety, especially on the slate slopes of Ribeira Sacra.
