On Precambrian granite and schists to the north, the ten crus of Beaujolais — Moulin-à-Vent, Morgon, Fleurie, Brouilly, Chiroubles, Côte de Brouilly, Chénas, Juliénas, Saint-Amour and Régnié — produce the most concentrated and long-lived Gamays, capable of being mistaken in blind tasting for a Bourgogne. Moulin-à-Vent and Morgon offer the greatest tannic structure; Chiroubles and Saint-Amour are the lightest and most floral.

To the south, on clay and silt soils, the Beaujolais and Beaujolais-Villages zone produces the Nouveau wines (released on the third Thursday of November) made by predominantly intracellular carbonic maceration that extracts fresh cherry and banana fruit with minimal tannin. The recent reinvention of the region, led by natural wine producers and artisan négociants, has returned Beaujolais to the forefront of global wine debate.
