Commercial viticulture in the United States is concentrated in California (more than 80% of production), followed by Washington, Oregon, and New York. The AVA (American Viticultural Area) system delimits geographic zones with distinctive climate and soil characteristics, but—unlike European DOs—does not regulate varieties or yields. There are more than 260 recognised AVAs, ranging from the most general to those specific to a single vineyard.

Washington State produces high-quality Cabernet Sauvignon, Merlot, and Syrah reds in the Columbia Valley. Oregon is the benchmark for American Pinot Noir, especially in the Willamette Valley, where the cooler climate and volcanic and marine-origin soils produce expressions of greater elegance than Californian examples. New York, with the Finger Lakes as the benchmark AVA, produces European-style Riesling on schist soils.
