The Côte Chalonnaise begins with Rully, which produces whites and reds in roughly equal proportions: the Chardonnay wines are mineral with good acidity, influenced by the Jurassic limestone and marl soils; the Pinot Noir wines are light and fruity, with a profile closer to a Côte de Beaune village than to the fuller-bodied wines of Mercurey. The appellation has 23 Premiers Crus, many of small size.

Rully is also the home of Crémant de Bourgogne on the Côte Chalonnaise: négociant houses produced some of Burgundy's first sparkling wines here in the twentieth century. Today still wines have taken centre stage, with producers such as Dureuil-Janthial leading a new generation of quality in the sub-region.
