Jean-Marc Pillot represents the fourth generation of his family in Chassagne-Montrachet, having taken over the 15-hectare estate in 1991 and now working alongside his son Antonin, the fifth generation, who joined in 2019. The Rully comes from a parcel farmed by personal arrangement with grower friends, bottled under the domaine label — a long-standing sourcing practice at Pillot. Les Gaudoirs is a village lieu-dit in the southern, higher-altitude, cooler sector of Rully, planted on very stony soils over a limestone plateau. The roughly thirty-year-old Chardonnay vines have been farmed under organic conversion since 2021, with full certification achieved with the 2024 vintage.
Whole bunches are pressed pneumatically, and the wine is aged for approximately twelve months on fine lees in barrel with around 20% new oak, followed by six months in stainless steel before bottling unfined and unfiltered.

Jean-Marc Pillot is the fourth generation of his branch of the Pillots in Chassagne-Montrachet. He came to work with his father, Jean, in 1985, and after six years at his side took over the domaine in 1991, with his wife Nadine and his sister Béatrice.
Some fifteen hectares and around 60,000 bottles a year. The bulk sits in Chassagne-Montrachet, with parcels besides in Puligny-Montrachet, Meursault, Santenay and Rully.
One figure is worth looking at: five of those fifteen hectares are planted to pinot noir. He is credited with keeping alive the village's tradition of red wine, in a commune whose worldwide fame rests on its whites. That is a third of the estate given to the colour that does not sell the name.
