High on the Aveyron plateau at 400–600 metres altitude, this small appellation produces wines of intensely local character from Fer Servadou (locally called Mansois) at a minimum of 90% of any blend. The variety thrives on the red sandstone and schist soils collectively called rouergue rouge, producing wines with deep colour, firm tannins, high acidity and flavours dominated by blackcurrant, black pepper and iron-rich minerals.

The wines are deliberately artisan in character — small family estates, limited distribution, no commercial polish — and require patience: two to five years of bottle age softens the tannin structure before the appellation's genuine complexity emerges. Tiny production and strong local identity make Marcillac a compelling discovery for drinkers seeking alternatives beyond the mainstream south-west appellations.
