One of the wine world's supreme achievements, this celebrated appellation produces lusciously sweet wines through the action of Botrytis cinerea — noble rot — on Sémillon, Sauvignon Blanc, and Muscadelle across five communes of the southern Graves. The morning mists rising from the Ciron river and the warm afternoons of autumn create the ideal conditions for the fungus to concentrate sugars, acids, and a complex array of honeyed apricot, saffron, and marmalade flavours that define the appellation's character.
