Carved into the Pyrenean foothills south of Pau, this appellation bases its reputation on two indigenous varieties with thick skins and high natural acidity ideally suited to late harvest. Gros Manseng dominates the dry Jurançon Sec, producing aromatic, vibrant whites with tropical fruit, grapefruit and white pepper at moderate alcohol levels. Petit Manseng is reserved for the sweet style, left on the vine for passerillage — natural desiccation driven by the autumn foehn wind from the Pyrenees rather than botrytis.

The moelleux is defined by the extraordinary combination of tropical and exotic concentration — pineapple, mango, cinnamon, saffron — and a piercing structural acidity that allows the finest examples to age twenty years or more. Henri Ramonteu (Domaine Cauhapé) and Charles Hours (Clos Uroulat) set the reference standard for the appellation's full range.
