Port is a fortified wine produced in the Douro Superior by the addition of grape spirit during fermentation, when the must still contains residual sugar, to arrest fermentation at between 19 and 22% alcohol. The Douro's six-letter vineyard classification system (A–F), based on altitude, slope, aspect, soil, variety and vine age, determines which vineyard may qualify for the highest-category Port.
The most complex style is Vintage (a declared single exceptional year), aged in bottle for decades and capable of evolving for fifty years or more. Tawny ages in small barrels with oxygen exposure, developing an amber colour and aromas of dried fruit, walnut and caramel; Tawnies with an age indication (10, 20, 30, 40 years) are blends of vintages whose average corresponds to the stated years. LBV (Late Bottled Vintage) offers the character of a single year with greater accessibility, not requiring decanting in most cases.
