The Protected Geographical Indication covers still wines produced in the province of Cádiz outside the framework of the established denominaciones de origen (Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda). The IGP allows production with local and international varieties in terroirs not recognised by the DOs, in a context of recovery of low-yield viticulture in the province of Cádiz.

The geographical setting includes albariza, red clay and loam soils in the Jerez area, with dominant Atlantic influence. Palomino Fino, Tintilla de Rota, Mantúo de Pilas and international varieties coexist under this umbrella, which has enabled the recovery of indigenous varieties that had virtually disappeared from the commercial vineyards of Cádiz.
