The archipelago has four denominations: Binissalem and Pla i Llevant on Mallorca, Vi de la Terra Mallorca (IGP), and Menorca. Mallorcan viticulture, concentrated in the centre of the island at altitudes of 100 to 400 metres, has a continuous tradition dating back to Roman times. Soils are clay-limestone with good permeability; the insular Mediterranean climate moderates thermal extremes compared to the mainland.

Manto Negro and Callet are the benchmark indigenous red varieties: Manto Negro produces reds of moderate colour, soft tannins, and high acidity; Callet, cultivated mainly in Pla i Llevant, produces wines of greater structure and complexity. Prensal Blanc (Moll) is the most representative indigenous white variety. The presence of Cabernet Sauvignon, Merlot, and Syrah in Binissalem reflects the orientation towards international varieties in the 1980s and 1990s.
