The DO Vinos de Madrid comprises three subzones with distinct profiles: Arganda, Navalcarnero, and San Martín de Valdeiglesias. The latter, on the southern foothills of the Sierra de Gredos—historically and stylistically linked to the Cebreros vineyards in Ávila—concentrates the viticulture that has led the reappraisal of Madrid wine production since the first decade of the 21st century.

Garnacha on granite soils at altitude (700–1,200 m) is the driving force behind this renewal: old bush-trained vines, own-rooted in many cases, producing wines of moderate colour, high acidity, fine tannins, and a mineral profile more closely connected to northern Spanish or northern Rhône wines than to the powerful reds of the meseta interior. Albillo Real produces genuine whites of high acidity and mineral character in the same granite zone.
