24-hour pre-fermentation maceration in a refrigerated truck. Fermentation with 100% stem at low temperature and maceration for 45 days. Stepped on with the feet and smooth movements to avoid excessive extractions. Native yeasts and low levels of sulfur. Aging for 11 months in French oak barrels of 500 liters and different coopers and 5 months in stainless steel for natural stabilization.
