To the south-west of Chablis, on compact Portland limestone soils from the Portlandian era, the Bourgogne Chitry denomination produces Chardonnay and Pinot Noir of regional character — without the prestige of illustrious names, yet with the calcareous minerality of the Auxerrois subsoil. The whites have a marked acidity and are more approachable than a Chablis; the reds show the lightness of Pinot Noir in a cool climate. These are wines from producers such as Olivier Morin that represent Burgundian value with a notably high quality-to-price ratio.
