The Asociación de Bodegas de Vinos de Pago brings together producers whose recognition as a Vino de Pago — a legal category that requires a direct link between a singular terroir, the vineyard and the winery on a single site — places them outside the conventional system of denominations of origin. Each Pago has its own specification approved by the Ministry or the relevant regional government.

The association's members — which include Dominio de Valdepusa, Dehesa del Carrizal, Finca Élez, Pago de Arínzano and Pago de Otazu — share the principle of expressing a single terroir as their differentiating argument against the regional DOs. The diversity of climatic zones and varieties means there is no common style: the coherence is conceptual, not organoleptic.
