Produced by the méthode traditionnelle across the Loire's principal appellations, this sparkling wine centres on Chenin Blanc blended with Cabernet Franc for structure and Chardonnay for roundness. A minimum of nine months on lees before disgorgement is required, building autolytic complexity — yeast, brioche, toasted notes — that complements Chenin Blanc's inherently high acidity.
The result is typically more expressive on the nose than Crémant de Bourgogne, with Loire-typical aromatic intensity and a fresher palate profile. Blanc de Blancs bottlings from Vouvray — pure Chenin Blanc with méthode traditionnelle discipline — represent the most terroir-specific expressions, capable of rivalling Champagne blends at a fraction of the price.
