Domaine Baud has been crafting wine in Le Vernois, in the heart of the Jura, since 1742, and since 2016 the estate’s ninth generation — Bastien, overseeing viticulture and winemaking, and Clémentine, leading commercial affairs — has guided its 25 hectares under Terra Vitis sustainable certification. This Chardonnay hails from the L’Étoile AOC, a small appellation dedicated exclusively to white wines, built on a remarkable geology of iridescent Triassic marls and grey Liassic marls rich in pentacrine fossils — the ancient sea-star remains that gave the village its evocative name — a terroir that stamps the wines with a ferrous minerality and saline tension found nowhere else in the Jura.
Vinified in the ouillé style, with barrels kept topped up at all times to prevent any oxidative exposure, aged in foudres and Burgundy pièces.

The story begins in 1742, when Jean-François Baud settled as a winegrower in Le Vernois. Nine generations on, the family is still there.
The decisive moment, though, is 1950. René Baud, the seventh generation, had to rebuild a vineyard that phylloxera and the two world wars had left in pieces. He started again with four hectares.
In 1978 the eighth generation, Jean-Michel and Alain, set up the Gaec Baud Père & Fils.
Today there are twenty-two hectares across three appellations — Côtes du Jura, Château-Chalon and L'Étoile — and six counting Crémant du Jura, Macvin and the eaux-de-vie. The ninth generation is at the helm.
