Founded in 1889 by brothers Primitivo and Tomás Collantes, emigrants from Valle de Iguña in Cantabria, Bodegas Primitivo Collantes held its first harvest in 1903 and has been based ever since at Bodega El Gallo on Calle Ancha in Chiclana de la Frontera; the estate is now run by the fourth generation, with consulting oenologist Ramiro Ibáñez Espinar guiding production. Their 55-plus hectares are spread across three pagos — Pozo Galván, Matlián and El Inglés — planted on albariza tajón soils under a coastal Atlantic climate. Los Cuartillos draws exclusively from the two hectares of Moscatel de Grano Menudo (Muscat Blanc à Petits Grains) at Finca Matlián, a notably finer and rarer variety than the Moscatel de Alejandría more commonly found in Jerez.
The grapes are picked on the first day of harvest, with no sun-drying (asoleo) or addition of arrope, preserving the fruit's freshness before partial fermentation in temperature-controlled stainless steel tanks and subsequent fortification to 15% alcohol. The wine then ages for approximately 18 months without oak contact — the defining distinction from the Viejo expression, which spends a minimum of two years in American oak barrels — leaving it with around 210–230 g/L of residual sugar and a profile of orange peel, quince, bergamot, peach, honey, lychee, elderflower and camomile underpinned by a clean mineral thread. The palate is silky and full, with the sweetness balanced by lively acidity and a mineral bite; the wine has received a gold medal at Monovino and was ranked first among wines under €10 by Mileurismo Gourmet in 2014, and sits in the top 7% of wines worldwide on Vivino.
