Primitivo Collantes
We let you know when a new wine arrives or drops in price.
The winery began in 1889, when the brothers Primitivo and Tomás Collantes arrived in Chiclana de la Frontera from the Valle de Iguña, in Cantabria. Their first harvest was in 1903, and they bought part of a winery at Calle Ancha, 51, which is still their home today.
In town it is known as Bodega El Gallo. Today the fourth generation runs it, with another Primitivo at the helm. They buy neither grapes nor wine from anyone, and sell no must to other wineries: everything that leaves here is from Chiclana and from the family.
The Palomino vineyard lies 8 kilometres from the sea, in the Pozo Galván and Matalián plots, on albariza in its different forms — tosca cerrada, lustrillo and tajón — with Moscatel de Grano Menudo alongside the Palomino. Ageing runs through the criaderas and soleras system.
The range is led by the Arroyuelo fino and the Amontillado Fossi, which gets a second fortification with Arroyuelo after its time under flor. Moscatel Oro Los Cuartillos comes from 2 hectares of Moscatel de Grano Menudo, with no sun-drying and no arrope. El Trovador Cream is blended with over 20% Moscatel de Grano Menudo instead of Pedro Ximénez. And under IGP Cádiz they make Socaire, from Tintilla de Rota and other varieties native to the area.
