The Jura vineyard is one of the oldest in France. In 1865, phylloxera appeared. The Jura vineyard then occupied 20,000 ha. It was relaunched thanks to grafting on so-called "American" rootstocks. Currently, the Jura vineyard has 1,800 hectares divided into 4 geographical designations: Arbois, Côtes du Jura, l'Etoile and Château-Châlon. This wine is presented in a special bottle called "Clavelin" (62 cl) with wide shoulders.
Harvested at the limit of over-ripeness. As the emptying settles in the barrel, a veil of yeast forms on the surface that will transform the character of the wine until Vin Jaune is obtained. Aged in chambers after fermentation without filling for 6 years.
