The Jura vineyard is one of the oldest in France. After phylloxera appeared in 1865 and reduced the original 20,000 ha to today's 1,800, the vineyard was re-established through grafting onto American rootstocks. Harvested at the limit of over-ripeness. As the wine rests in the barrel, a yeast veil — the voile — forms on the surface and gradually transforms the character of the wine into Vin Jaune. Aged in barrel without topping up for a minimum of 6 years.
