30-year-old vineyard located 1 km from Clos de Vougeot, gently sloping, facing east-southeast at 350 metres above sea level. Clay-calcareous soil, 50% stony. 100% Pinot Noir.
Half is destemmed. Cold maceration for one week, native yeasts. Long cuvaison of 5 to 6 weeks at 30 °C, with frequent pumping over, punching down and "pigeotaje", and a warmer temperature before pressing. Aged 18 months on fine lees in oak barrels (30% new, 30% one-fill, 40% under 3 years old).
Manuel Olivier started in 1990 with a few hectares of vines, while also growing soft fruit. He did not come from a winegrowing line: he built the house himself.
He works more than fifteen hectares today from the hamlet of Corboin, in the commune of Nuits-Saint-Georges. The bulk is in the Hautes Côtes de Nuits, but he holds parcels across the Côte de Nuits and the Côte de Beaune: Morey-Saint-Denis, Chambolle-Musigny, Gevrey-Chambertin, Vosne-Romanée, Nuits-Saint-Georges, Aloxe-Corton, Pommard, Meursault and Clos de Vougeot.
Since 2019 he has taken part in something rarely seen: the recovery of the Dijon vineyards and the setting up of a new appellation, Bourgogne Dijon. Burgundy's map has been settled for generations and seldom grows.
His Hautes Côtes de Nuits comes from vines of about thirty years a kilometre from the Clos de Vougeot, on a gentle east-southeast slope at 350 metres, on clay-limestone soil half made of stone.
