Domaine George is a family estate in Courgis with an unusual history: David George's grandfather, a German prisoner of war who chose to remain in France after the Second World War, began producing wine in the 1940s; his son Michel worked under cooperative contract until 1997 before going independent, and today three generations work side by side — Michel alongside sons David and Jonathan — across 16.5 hectares. Les Beauregards is a Premier Cru climat on the left bank of the Serein river, with a south-facing exposure and shallow Kimmeridgian clay-marl soils on a slope steep enough to make tractors unviable; Michel George assembled this parcel between 1988 and 1989, purchasing it from five separate owners and replanting from scratch.

The wine is made entirely in stainless steel with no oak at any stage, using indigenous yeasts and ageing on the lees without filtration — a process that preserves the terroir's mineral character in full. The 2023 vintage in Chablis escaped serious frost, passed through a wet spring and a dry summer, and then met a September heatwave that accelerated ripening and produced a generous, fruit-forward style: citrus, white blossom, and green apple sit in the foreground, with the Kimmeridgian flint minerality present but less austere than in cooler years.
