From 10 hectares of vineyards in the village of Beines, Burgundy, France, with south-east exposure and Kimmeridgian calcareous limestone soils. 100% Chardonnay. 54,000 bottles.

The 1er Cru Vau Ligneau parcels are hand-harvested. Once the juices are in stainless steel tanks, they undergo full alcoholic fermentation with natural yeasts for 15–18 days at low temperature (18°C), followed by full malolactic fermentation with natural bacteria at 20°C over several months. After racking to remove the gross lees, the wine ages in tank on fine lees for at least 6 months with weekly pumping over. Bottling is done tank by tank; the remaining wine stays in tank on lees for at least 18 months.

El vino procede de viñedos ubicados en el pueblo Beines, con orientación sur-este y suelos calcáreos y calizos. Se elabora a partir del 100% de la uva Chardonnay. Las parcelas seleccionadas manualmente se fermentan inicialmente con levaduras naturales durante 15-18 días a baja temperatura (18°C). Posteriormente, se realiza una fermentación maloláctica gracias a bacterias nativas a 20°C durante varios meses. El vino envejece sobre lías finas durante al menos 6 meses con remontados semanales y luego se filtra y embotella.

The Moreaus have been in Chablis since 1814, but they did not begin with vines: they were coopers and wine merchants. First came the vessels and the trade, and only later the growing.

In 1904 the family bought the Clos des Hospices dans Les Clos, a parcel inside the Les Clos grand cru that remains their monopole: nobody else bottles that wine.

Louis Moreau has run the house since 1994 and is the sixth generation. Around fifty hectares, based in Beines.

The grands crus and the old vines of Vaillons are farmed organically; the rest under lutte raisonnée.
