Simonnet-Febvre

The house was founded in 1840 by Jean Febvre, a cooper by trade who came from Montbard. From the outset it was known for something almost nobody in Chablis did: chardonnay with bubbles. It remains the only house in Chablis making Crémant de Bourgogne, and it has been since day one.

One document closes the circle of this story. On 8 December 1891, Louis Latour — the fourth-generation one — celebrated buying Château Corton by ordering bottles of sparkling Chablis from Simonnet-Febvre. One hundred and twelve years later, in 2003, Maison Louis Latour bought Simonnet-Febvre.

The Latours have since rebuilt the winery entirely: stainless steel tanks and pneumatic presses.
