Roux Père et Fils was founded in 1885 in Saint-Aubin, on the Côte de Beaune, and is today run by brothers Sébastien and Matthieu Roux, representing the fourth and fifth generations of the family. With 70 hectares spread across 180 parcels, the domaine practices sustainable viticulture and produces a wide range of Burgundian appellations, with whites accounting for the majority of output. The Bourgogne Aligoté AOC, established in 1937, is dedicated to Aligoté, Burgundy's classic secondary white grape, which ripens earlier than Chardonnay and is characterised by naturally higher acidity and a lighter body — and is traditionally the base of the Kir cocktail, mixed with crème de cassis.

This cuvée, labelled "Albus," is made from 100% Aligoté grown on clay-limestone soils, gently pressed and fermented in temperature-controlled stainless steel with malolactic fermentation; it then rests on its lees in tank for 13 months before bottling — a production run of 18,217 bottles at approximately 12.5% alcohol, best served at 10–12°C. The wine is pale straw with green tints, offering a nose of acacia, hawthorn, lemon zest, white flowers, and a mineral thread, while the palate delivers citrus and redcurrant fruit with lively acidity and a subtle creaminess from the extended lees contact, closing on a clean toasted almond finish. It was awarded one star in the Guide Hachette 2024 and is best enjoyed young, through 2025.
