In the Jurassic massif between Bourgogne and the Alps, the small region of the Jura cultivates indigenous varieties found nowhere else. Savagnin produces the legendary vin jaune, aged for at least six years in small barrels left unfilled (sous-voile, under a veil of yeasts) until it concentrates aromas of walnut, curry and fenugreek of unmatched intensity; vin de paille is made from grapes dried on straw or reed mats. Macvin du Jura is a vin de liqueur (grape must plus eau-de-vie) with its own appellation.

Jura Chardonnay is made in two contrasting styles: ouillé (topped up, without air contact, fresher and more fruit-driven) or sous-voile (oxidative, similar to vin jaune but to a lesser degree). Reds from Trousseau (spicy and age-worthy) and Poulsard (thin-skinned, light, almost rosé) complete a singularly original offering that attracts lovers of natural wine and varietal biodiversity.
