Albillo Real vineyards over 90 years old, cultivated in bush and dry land and with ecological practices in the town of Cebreros. Located in the areas of Valdemelendo and Las Parrillas, with an altitude of 650m above sea level and on degraded granite soils. 95% Abillo Real, 5% Palomino Fino.

  Manual harvest in 20kg boxes. Maceration with skins for 3 days at controlled temperature. Gentle pressing, cold debourbage 24/48h. Alcoholic fermentation with native yeasts at controlled temperature. Aged for 7 months in used 225l oak barrels. Once the aging has finished, we mix with a small % of manzanilla from Sanlúcar de Barrameda.
