Certified organic vineyard located less than 40 km from the ocean. Soil composed of clay and slate, on partially decomposed parent rock, with good nutrient reserves and water retention properties. 100% Chenin.
Manual harvest. After gentle pressing and racking, the must is transferred to 300-liter barrels where it begins natural fermentation with wild yeasts. It is aged for 12 months in barrels and tanks.
