100% Chenin Blanc from vines planted around 1975, grown on schist and sandy sandstone soils along the left bank of the river Layon in Anjou. Grapes are harvested by hand in successive passes to select only the most overripe fruit, as required by the AOP. The name "Les Ondines" refers to the freshwater nymphs of French mythology — a direct evocation of the river Layon itself.
Domaine des Trottières was founded in 1890 in Thouarcé and has been run by the Lamotte family since 1985. Certified Terra Vitis and HVE Level 3 for sustainable farming. Aged eight months on fine lees in stainless steel with no wood. The moelleux style delivers 95 g/L of residual sugar held in check by Chenin Blanc's signature acidity.
