Domaine de la Roche Moreau is a fifth-generation family estate run by André Davy in Saint-Aubin-de-Luigné, perched along the Corniche Angevine in the Val du Layon; its ageing cellars occupy a disused coal mine, and the domaine has held HVE certification since 2018. In addition to this communal cuvée, the estate produces Chaume 1er Cru and Quarts de Chaume Grand Cru, with the Saint-Aubin bottling drawing on clay-schist soils on the right bank of the Layon river.
This 100% Chenin Blanc is harvested by hand from October through mid-November, selecting both botrytised and passerillé grapes before a slow, temperature-controlled fermentation and eight months of ageing in stainless steel — no oak at any stage — resulting in 6,000 bottles at 12% alcohol and approximately 104 g/l of residual sugar. The wine is golden in colour, with candied fruit, honey, and noble rot character kept lively by Chenin Blanc's naturally firm acidity, finishing fresh and long. It received three stars and a Coup de Cœur from the Guide Hachette des Vins 2025, the guide's highest distinction.
