Domaine de la Roche Moreau is run by André Davy, fifth generation, from its estate in Saint-Aubin-de-Luigné on the Corniche Angevine, where a classified 17th-century building houses the winery and ageing takes place in caves carved into a former coal mine, ensuring stable temperature and humidity year-round; the domaine has held HVE certification since 2018. The Chaume 1er Cru appellation — granted AOC status in 2011 after lengthy litigation — covers a delimited area around the hamlet of Chaume in Rochefort-sur-Loire, where shallow brown soils over schist, sandstone, quartz and puddingstone on south-facing slopes in the Layon meander favour rapid drainage and the autumn humidity that encourages noble rot; yields are capped at 25 hl/ha, with a minimum of 68 g/l residual sugar at bottling.

The wine is 100% Chenin Blanc, hand-harvested in successive passes from October through mid-November, selecting only overripe and botrytised grapes; fermentation is slow and temperature-controlled, followed by ageing on fine lees, yielding 12% alcohol and 134.6 g/l residual sugar. The 2021 shows a deep golden colour with aromas of quince, mirabelle plum and candied fruit, leading to a silky, ample palate with well-balanced freshness and a long finish — the cool vintage brought excellent botrytis development alongside the acidity and structure needed for extended cellaring. It received three stars and the Coup de Cœur from the Guide Hachette des Vins 2024, which described it as "un modèle de l'appellation pour les années à venir."
