Late maturing and capricious, Mourvedre is one of the most demanding varietals grown in the south of France, especially when it is found, as here, on the northern edge of its growing region. When the wine is put in the barrel for maturing, part of its volume evaporates during the process and this proportion of the wine that has disappeared is called 'La Part des Anges'. 70% Mourvedre, 20% Grenache and 10% Syrah.
